Another hit for the freezer friendly recipes I've been trying lately! Even DH agreed that this was one of the best ones yet. And I'm telling you - it smelt amazing cooking this afternoon. I'm really glad that I have another one of these sitting in my freezer. Hope you enjoy this ridiculously easy and incredibly tasty meal :) Sausage, Peppers and Onions - from this recipe (Makes 2 recipes) 6 Italian sausages (or chicken sausage) 2 green peppers 1 red pepper 1 large red onion 4 cloves garlic, minced 2 cans Italian diced tomatoes 2 tbls Italian seasoning Directions - Easy as 1 - 2 - 3! : 1) Gather ingredients. I didn't read the recipe carefully enough and read right over that 3rd pepper. So I just pulled out a bag of sliced frozen peppers from the freezer and used a handful in each preparation. Slice peppers and onions. 2) Put in a can of tomatoes, a scoop of minced garlic, and dash of oregano in each preparation. One of mine went directly into the crockpot and one went directly into the freezer. 3) For the freezer bag, shake all ingredients together, seal, lay flat and freeze. Directions for bag: Add drizzle of olive oil, cook on low 6 hours, serve over hot noodles or fresh French bread with mozzarella cheese. And 6 hours later, it was ready! The recipe didn't say whether to slice the sausage before or after cooking, so I decided to wait until after cooking to dice it. It worked great because for DH I made a sandwich by slicing the sausage lengthwise. And for me I sliced the sausage into rounds and ate my bread alongside the dish (easier for having to have a third hand with Little One running around!). Coincidently, I served it alongside a salad of cherry tomatoes, sliced boccaccini (small balls of mozzarella in water - drained), a drizzle of olive oil, some basil and a dash of salt and pepper. Yum!
I plan on cooking some pasta tonight, topping it with the remaining peppers, onions, and tomato sauce and serving up the last sausage sliced into rounds for lunch tomorrow. Oh boy! Now that'll be a good Thursday lunch!
The Verdict This recipe is soooooo yummy to be sooo easy! It's one of the best, most flavorful crockpot recipes I've tried in a while. Each bag could definitely support the addition of one more sausage because you seem to have a lot of peppers, onions, and tomatoes left over. The recipe called for Italian seasoning, but oregano worked just fine for me. I used mild Italian sausage, but hot would be great too. I will most definitely be keeping this on the short recipe list! I'm excited to try it over pasta. It's going to be so delicious because the recipe made a great tomato sauce. You could even cut up the sausage smaller when it's done and add some chicken stock or water (in the last hour of cooking) to make some soup for a hearty sausage soup this winter. Bulk it up with rice, beans, quinoa. Whatever your little heart desires. Wowzers. You should totally give this recipe a try! |

Made this last night and it was great! I now have this and the citrus chicken in my freezer for a bad week =) Thanks for the great recipes. I did take your advice and added a few more sausages in each one and I'm glad we did. It gave us plenty for lunches etc.
