Egg and Cheese Muffins

I have recently been on the hunt for more protein for the kids at breakfast.  A great friend told me how to make these little egg muffins and I love them. They are easy to fix, versatile, and I have left overs for at least another day or two of breakfasts.  I guess this isn't really a recipe but I'm recording it here so I don't forget about these little gems.

As you can see I made mini and regular versions this time so the pictures show the prep for both sizes!

Here's What You Need:
-eggs (One egg per muffin you plan to make. I usually make only 6 muffins at a time)
-shredded cheese
-spinach
-any other veggie you want to throw in

Here's What You Do:
1.  Preheat the move at 360 and spray the muffin pan with Pam for easy removal
2.  Fill the bottom with the veggies you are using.

3.  Fill the rest of the way up with shredded cheese and pat it down a bit.

4.  Whisk eggs together and put into a measuring cup (for easy of pouring).
5.  Pour the eggs over each muffin.

6.  Bake at 360 for 20-23 minutes.

So this time I made 4 regular sized muffins and 4 mini muffins to see if the kids would like them better. Elli loves these things and Jackson did fairly well with the mini ones (I still have to feed them to him) but he got it down.  He isn't a huge egg person so this is a victory for me.  My mini ones were done at 20 minutes and I let the larger ones cook for 23 minutes.  These are delicious straight from the oven but go ahead and put your left overs in the fridge. You can pop them in the microwave for 1 minute the following morning for an easy breakfast on the go.

Versatile? Yes!  Make these with spinach, bell peppers, chopped broccoli - the list goes on and on and on.

Hope this gives you a quick breakfast to get you out of the oatmeal rut.  Oh wait?  Was that just me stuck in the oatmeal rut? Well maybe you'll enjoy it anyway!!

Whole Wheat Pumpkin Oatmeal Muffins

I'm craving sweets.  Real bad.  Lots of sweets.  Anything I can get my hands on really.  And this is happening during one of the worst possible times of the year - Halloween candy is EVERYWHERE!!  I overdid it yesterday and felt it in the afternoon.  But, nonetheless I woke up this morning with more sweets on the brain.  Pregnancy, sigh.  After a quick look on Facebook this morning, I found that Team ACT had posted a picture of her Super Easy 2 Ingredient Pumpkin Muffins and decided it was high time for some pumpkin in these parts!  One problem.  No cake mix.  Doh!  SO, online searching I went.  These from Kitchen Treaty are moist and delicious, just like the pumpkin muffins Team ACT made, but they do require a little more time.  Good news, however, (Miss Team ACT :)) ... they're even better if you add chocolate chips to the mix!!

Lasagna Roll Ups & Homemade Marinara Sauce

I made these roll ups on January 16th.  Today is January 28th and I'm just now blogging about it.  Can you tell I'm SO ready for February?  New month.  New start.  Do you want to know a secret?  FRIDAY is February 1st!!  This Friday.  Does it amaze you as much as me that this year is flying by already?!?  Let's all do a small celebratory dance... drum roll please... because I've sold THREE orders in my Etsy store.  Y'all.  That is just amazing.  Thank you to everyone who has backed my projects with your support!  As a sign of thanks - I'm doing a giveaway! Check out my Facebook page and comment before 8 pm tonight to be entered in the drawing :)  You just don't know how much I've needed your sweet faces this past month.  You are truly a gift from God!!

Now, let me tell you another secret.
These beautiful things are in my freezer right now!  Topped with my homemade marinara.  Waiting on February 14th.  8 pm.  Dinner date at home with the DH after Little One is in bed.  I'm so excited!  We won't have to fight the crowds.  Won't have to worry that Little One will decide to be cranky on that one night we want to eat in peace.         I won't have to be flustered and running all around wondering what I'm going to fix.  These are 4 leftovers from my meal we had mid-January.  Frozen.  Ready to go.  All I have to do is add a salad and some garlic bread.  And boom.  Valentine's Dinner - ah-hem - a homemade Valentine's dinner is made!

I'll be the first to say these do take a little prep time - or maybe it's just me. Those blasted lasagna noodles gave me a little trouble because I didn't have a pot big enough to really cook them.  Maybe you are better at this than I!  Now I know why I usually stick to the Crockpot Lasagna ;)  Buuuut.  This is worth the effort.  Especially to dote on your special ones with.  What else says love like good, homemade food.  Only you and I have to know you pre-made it, froze it, and it only took 35 minutes to reheat on a weeknight!

Breakfast Burritos: Freezer Friendly

Y'all.  Let me tell you what.  I made these babies last night and was so stoked when I calculated the costs... $1.50 each.  And in one cooking session, I made enough to have 14 breakfast burritos for DH and I to have in the mornings.  If you're like us, any extra way to stretch a buck is always appreciated.  Imagine my surprise this morning when I heated mine up and found that Little One also enjoyed this breakfast treat!!  I ended up making it with organic hash browns, organic uncured bacon (no nitrates), and organic eggs.  So I was stoked that they only cost $1.50.  And boy, were they yummy!  You should totally make these... soon!  Help keep your wallet and tummy full with these filling and delicious burritos :)

Egg & Cheese Breakfast Sandwiches: Freezer Friendly!

Hello August!  Where did July go?  In honor of "Back to School" month, here is a quick, easy, and freezer friendly breakfast option for those busy mornings.

I've mentioned that I'm on a quest for better, quicker, healthier breakfasts.  I found this one and have been meaning to try it for quite some time.  I fiiiinnnnaaalllllly made time this week and boy, they didn't disappoint!  These little egg (and anything else you want to put in them :) cups are made in the oven in muffin tins.  It does make a little bit of a mess, but it makes mornings SO much easier - it's worth it!

This was a surprise hit for our family!  It's a versatile and delicious little bite of goodness.  You have to try these.  Yes, totally go get the ingredients and make them tomorrow!

Veggie & Sausage Egg Scramble

On the menu tonight is Chicken Tetrazzini... except for who's the dummy that forgot to take it out of the freezer until this morning??  {Hand vigorously raises and waves in the air, "Me! Me! Me!"}  Oh well.  I guess that's what for dinner tomorrow!  So, I had to scramble, pardon the pun, to find something for dinner tonight.  This is a super customizable meal because I definitely threw together some frozen veggies, some leftover broccoli from dinner two nights ago, some cooked sausage, and some eggs.  And voila!

Top with cheese and you're done!
