Crispy Kale Chips

It seems like it's been f.o.r.e.v.e.r. since we've had a "normal" week around here!  Thankfully, the kale I bought 2 weeks ago stayed fresh in the refrigerator long enough for me to make this yummy treat.  I've heard so much about these "kale chips" and I finally got up the nerve to try them.  They were kinda addictive.  Yes.  I literally ate half the tray while making dinner last night.  Yeah.  Yes.  Yeeeessssss.  Crunchy like chips... a little salty like chips... and none of the guilt of chips.  Try them!  Hopefully you'll be pleasantly surprised too! (Please pardon the mediocre pictures... they're with my cell phone camera ... is one and a half too young for terrible twos? ;))



Crispy Kale Chips - from this recipe

1 head kale, ribs removed, washed and dried thoroughly, torn into 1 1/2 in. pieces
2 tablespoons olive oil
sea salt, to taste
(Note: I only used half the head of kale and reduced the olive oil and salt accordingly.)

Directions
Preheat oven to 275 degrees.
To cut the rib out of the kale, simply fold over the stem ("hot dog style" for my teacher friends ;)) and run your knife along the rib.  They remove easily. I then used my hands to tear the leaves into smaller pieces, put them in the colander  and rinsed well when I completed the removal of the ribs.  Then I took 2 paper towels and dried the kale so I could see no more visible water droplets.

Lay kale on a baking sheet.  Toss with olive oil (I just eyeballed it - got a little much, but again with Little One whining at my feet, I will take that loss...) and salt, to taste.  Mix well.

Note: This is half of the bunch of kale.  It shrunk up considerably while it cooked, so I don't know if you could pile the whole head on the sheet tray or not.

Bake at 275 degrees until crisp, flipping leaves halfway through.  I baked mine 10 minutes, tossed with a spatula, and cooked for 10 more minutes.  They could have used an additional 3 or 4 minutes because some of the pieces were still a little soggy from the oil, but Little One was on his way to a meltdown and I was trying to get dinner together. (This is what made me think I had too much oil!)

Serve.  Enjoy.  Pop them in your mouth like they're Pringles.  You get the idea!


The Verdict
I was in looooooove.  DH and Little One on the other hand were less than amused.  I was impressed with how good they tasted for a healthy little treat.  Some people in the reviews on the original website were unhappy because their kale was bitter.  I didn't think mine was bitter at all.  I'm going to continue to try with Little One - this would be such a good after school snack when he's older.  I've also read online that you can make these kale chips flavored by sprinkling with garlic, tossing in soy sauce (instead of salt), tossing in oil and apple cider vinegar for a salt & vinegar effect... yeah, so the options are pretty endless!  Try them and let me know what you think!  Don't be a scaredy cat like I was... kale really can be your friend :)

  1. Made these tonight and they were PERFECT! Jacob grew kale in his garden so we had a very organic, local treat =) They didn't even make it to the table - we ate the whole pan in like 5 minutes. Elli wasn't a huge fan, but we'll keep working on her! Delicious!

  2. So glad you made these tasty treats!! And I'm super jealous you had it growing in your garden ;) Glad to know I'm not the only one who thinks they're addictive. I just love the light, airy, salty crunch!
