So here goes. I changed this up a lot to fit our needs so I took out chili powder and such. If you want a spicier dish, check out the original recipe at the bottom of the post.
What you need:
1. 1 15 ounce can of pinto beans - drained and rinsed
2. 2 C frozen corn
3. 1 C salsa (we use mild)
4. 1 small onion chopped
5. 1/2 cup veggie broth or water
6. 1/3 teaspoon cumin
7. 1/3 teaspoon ground turmeric
8. Tortillas, ranch, guacamole, cheese (all optional ways to eat this delicious treat!)
What you do:
1. Mash the beans in a bowl. I like to leave it pretty chunky but you do the consistency you like. I may do it this way because I'm a bit lazy!
2. Saute the onion until translucent in the veggie broth over medium heat. Add your cumin and tumeric and saute another minute or so.
3. Add the corn and salsa to the beans and combine. Once it is combined - add the mixture to the onions and cook. Stir it occasionally until heated through.
4. Now how you fix these up is up to you. You can put it in half the tortilla, fold over, and heat them on the stove. I have a quesadilla maker so I put the mixture on half of the tortilla and then popped in the quesadilla maker to get that cute quesadilla look. Our children like these with cheese on the inside and topped with ranch. My husband and I add in extra spinach or lettuce. The options are endless. Try making your own guacamole (smash avocado and add lime juice) to put inside.
