Breakfast Burritos: Freezer Friendly

Y'all.  Let me tell you what.  I made these babies last night and was so stoked when I calculated the costs... $1.50 each.  And in one cooking session, I made enough to have 14 breakfast burritos for DH and I to have in the mornings.  If you're like us, any extra way to stretch a buck is always appreciated.  Imagine my surprise this morning when I heated mine up and found that Little One also enjoyed this breakfast treat!!  I ended up making it with organic hash browns, organic uncured bacon (no nitrates), and organic eggs.  So I was stoked that they only cost $1.50.  And boy, were they yummy!  You should totally make these... soon!  Help keep your wallet and tummy full with these filling and delicious burritos :)

Cilantro Lime Chicken: Freezer Friendly

Another great recipe... make one, take one!  We had this one night this past week and I just dropped off the frozen one to sweet family #2 this morning :)  I hope they like it as much as we did!  I'm telling you what - I'm totally into these meals I've been doing lately where I pull out all the ingredients one time and have two meals when I'm done.  Let's talk about that math!  Does 1 = 2?  For sure this time around.  Hope you enjoy this spin on annnooootther chicken dish!

Macaroni & Cheese with Tomatoes: Freezer Friendly

This week I've been making some recipes to take to another sweet family with a new addition!  There must be something in the water because babies are popping out around here like crazy.  Rest assured, I drink milk!  Haha :)  I stumbled on a great website with some freezer friendly meals and this recipe sure didn't disappoint.  It was creamy, a little sweet from the tomatoes, and crunchy from the breadcrumb topping.  It was very satisfying and would make a great main or side dish.  This recipe is also easily doubled - which I did - and it made FOUR 8 x 8 inch dishes of macaroni and cheese.  My kind of recipe for sure!  I baked one, froze one for me, and froze two to take!  You've gotta give this one a try ;)

Crockpot Stuffed Peppers

Please join in the collective "Ahhhh".  My DH got me a new camera for our anniversary!  Isn't she a beaut?  I'm slightly in love.  Alright.  More than slightly!  I took 800+ pictures with her the first weekend I had her.  Really.  I'm slightly ashamed by that vast number in 5 days.  Hey! At least it was a long weekend!?!  Anyway - this is the first time I have used her for taking food pictures... and I must say... I'm smitten!  It's amazing what a good camera can do with poor lighting.  And I'm amazed, too, because you can see the water droplets on the washed bell peppers!  Yes you can! Wowzers!  So regardless of how this recipe turns out, I'm posting it because I used the camera for the first time.  The recipe got rave reviews on Stephanie O'Dea's blog.  In 8 hours, we'll find out if the Greenes give it rave reviews too!

Black Bean and Corn Citrus Salad

Mommy Brain 101.  I swear I used to be able to remember things!  Let me tell you how this recipe began.  Weeelllll... I mixed up two different Black Bean Citrus Salad recipes I saw.  This ended up not being so bad because I made my own version that turned out pretty tasty.  But the funny part was that the recipe called for 1 grapefruit and 2 oranges.  Well, in the grocery store I picked up one big thing I thought was a grapefruit and two smaller ones.  I got home to find they were ALL THREE THE SAME type of orange.  No grapefruit to be had!  I mean really?  Those navel orange must have had different daddies if you know what I mean.  They sure didn't look related!  And I would have bet money that I had picked up a grapefruit because that was the largest orange I'd seen in a while!  Good thing I'm not a betting woman ... I always lose anyway! Haha!
This ended up being a delicious treat on a hot night.  I made this light dinner for Father's Day so that DH could enjoy these less than healthy treats.

Lazy Chicken Nachos

The last time I made the Lazy Chicken Dinner, I used pasta sauce.  This time I used salsa and made it into nachos.  I know it's almost the same thing, but I was so proud of how it turned out I had to repost to make sure you understand just how easy and versatile this recipe really is.

Super Bowl Sunday

Go Big Blue?!  We're not big football fans, but where we live almost mandates that you love football and pick a team.  So, we are pulling for the NY Giants :)  But secretly, we're watching mostly for the commercials!

On the menu tonight:
Blue Corn Chip Nachos
Apple Blueberry Pie

No, I didn't specifically plan this menu because of who we are pulling for.  Instead, this is a meal of necessity when I realized I reeeeaaaaaallllllly needed to go to the grocery store.  And next to Thanksgiving, Super Bowl weekend in a big football area would have been wild AND cRaZy.  So, we made do with what we had around ;)
