Turkey and Cheese Bread Bowls

I saw this on Pinterest and decided it was a good idea for my "mixing' up lunches" New Year's goal.  I put off making them because it looked a little labor intensive but my bread was going to go bad so I had to do it TODAY.  Surprisingly the kids played well while I worked on these and honestly, it didn't take as long as I thought.  By played well I mean J pulled out all Tupperware and every pot and pan I own...but hey I got lunch ready! I think maybe total prep time was 15 minutes and then they had to bake for 20.

The verdict? Very happy kids at lunch. E ate ALL of hers and then ate the last bit of J's that he couldn't finish.  The only negative - they are a bit messy and some floor cleaning was in order after lunch. Still, it was a healthy and filling and now I have 4 more in the fridge ready for the weekend.

Here is what you need (I cut my recipe in half from the original, I knew we wouldn't need that many):
1.  6 dinner rolls
2.  1 lb ground turkey
3.  half of medium onion
4.  1 can cream of mushroom soup (I used low sodium)
5.  1 cup sharp cheddar cheese

Here is what you do:
1.  Preheat oven to 350 (or wait if you are going to bake them later)
2.  Brown the ground turkey and the onion together




3.  Cut the tops off of the rolls, take out the insides, and set aside the tops for later use 


4. Once the turkey is brown, add in the cheese and cream of mushroom soup and stir
5.  Put the turkey mixture in the rolls, replace the lid


6. Wrap each roll individually in aluminum foil and bake for 20 minutes

Delicious!

Freezer Friendly: Homemade Crockpot Chili

Hi there :)
Missed you guys!
But, do tell.  How much are you loving the easy and delicious recipes from Team ACT?  I tell you what... I am SO glad she is a part of my team!

In honor of Fall being Just . Around. The. Corner - let's get some chili cooking!  Set it - forget it - and enjoy it after a long day.

I've tried many crockpot recipes for chili.  Some have been better than others, but this one has been my favorite so far.  And it makes a LOT.   I had plenty to serve for dinner to 4 adults and have enough to freeze for later.  We LOVE LOVE LOVED it served over baked potatoes with some cheese sprinkled on top.  This recipe was also the first in which I made my own homemade chili seasoning.  The recipe I found and used was delicious and had a little kick.  The best part about making your own is being able to control the amount and type of ingredients - I used less salt and more hot peppers for the kick.  YUM.

Lasagna Roll Ups & Homemade Marinara Sauce

I made these roll ups on January 16th.  Today is January 28th and I'm just now blogging about it.  Can you tell I'm SO ready for February?  New month.  New start.  Do you want to know a secret?  FRIDAY is February 1st!!  This Friday.  Does it amaze you as much as me that this year is flying by already?!?  Let's all do a small celebratory dance... drum roll please... because I've sold THREE orders in my Etsy store.  Y'all.  That is just amazing.  Thank you to everyone who has backed my projects with your support!  As a sign of thanks - I'm doing a giveaway! Now, let me tell you another secret.  
These beautiful things are in my freezer right now!  Topped with my homemade marinara.  Waiting on February 14th.  8 pm.  Dinner date at home with the DH after Little One is in bed.  I'm so excited!  We won't have to fight the crowds.  Won't have to worry that Little One will decide to be cranky on that one night we want to eat in peace.         I won't have to be flustered and running all around wondering what I'm going to fix.  These are 4 leftovers from my meal we had mid-January.  Frozen.  Ready to go.  All I have to do is add a salad and some garlic bread.  And boom.  Valentine's Dinner - ah-hem - a homemade Valentine's dinner is made!  

I'll be the first to say these do take a little prep time - or maybe it's just me. Those blasted lasagna noodles gave me a little trouble because I didn't have a pot big enough to really cook them.  Maybe you are better at this than I!  Now I know why I usually stick to the Crockpot Lasagna ;)  Buuuut.  This is worth the effort.  Especially to dote on your special ones with.  What else says love like good, homemade food.  Only you and I have to know you pre-made it, froze it, and it only took 35 minutes to reheat on a weeknight!

Zucchini Turkey Burgers Revisted

Hello.  I've missed you.  It's been a CRAZY - I repeat - CRAZY couple of weeks.  We traveled back to our home home for a weekend of wedding preparations and engagement partyin'. On our ride back I had shingles appear and was subsequently banished to my home for a week praying so hard that Little One wouldn't catch the chicken pox from me!  We traveled back home home to happily help celebrate DH's sister's wedding.  {insert deep breath here} And we had to leave early so we could travel back to our home and prepare for Hurricane Sandy.  Whew.  Just writing all that makes me tired.  I've never wanted to get back into a schedule and routine as I do now.  I wasn't lying when I said I was stocking my freezer for a busy October!  The good news is we are okay and we had no property damage from the storm.  We did, however, lose power and some of my freezer meals.  So sad!  I will post one of the recipes I was waiting on to cook - and I'll remake it - and let you know how it turned out.

I'm so glad I had these handy zucchini turkey burgers in the freezer. I was able to cook them up before we lost power so we could have some good protein to eat after the storm.  I unfortunately didn't have the ability to let them thaw all the way so they were still quite frozen when the time had come to cook them.  The winds were picking up and I just couldn't wait any longer.  But let me tell you - even though they were a little tough because I had to cook cook cook them - their flavor was delicious!  I was afraid the zucchini would make these fall apart when they were cooked, but they held together really well.  Know that I will make these again and prepare them in a way that they will maintain their juiciness :)  


See?  Easy way to get hidden veggies into your kids!  They look {and taste} just like real burgers, but they're loaded with zucchini!  They had a great flavor.  As you can tell, I cooked them on the stovetop.  I would highly highly suggest that you allow these burgers to thaw completely before cooking them.  

Even if our burgers were tough, we are so thankful that was one of the biggest problems of the week!  SO many people lost SO much.

Zucchini Turkey Burgers: Freezer Friendly

These burgers are in the freezer and waiting on me!  I'm excited to try them since I added zucchini to them for the first time.  If they're great - it would be an awesome way to add some more vegetables into our diet... something I'm always looking to do.  Check back and I'll let you know how they turn out!!

Meatball Subs! - Freezer Friendly!

Along with my freezer cooking preps a few weeks back, I made a pan of meatballs for us to have.  These are by far my favorite - and they are so moist and juicy!  This time instead of making them small, I made them about the size of a ping pong ball and cooked them a bit longer.  Last Saturday, we had just gotten back from a trip and were in full "Let's do nothing" mode.  Ever have one of those days?  We literally did nothing all day.  It was great to relax!

Well, I couldn't very well cook could I?  So I pulled out these babies and whipped up some marinara.  Actually, I had planned to have these sandwiches because I had bought some club rolls and shredded mozzarella, but I forgot the sauce!  So I made some really quickly.  I might just start making it this way all the time.  
For the sauce: Take a large can of whole peeled tomatoes.  Add to a sauce pan and use a spatula to break up the tomatoes.  I added a dash of basil paste and 3 cloves of smashed garlic (that I later removed).  You could also add some red pepper flakes, some onion, and/or olive oil.  This is where you can go crazy.  Add some shredded veges to make a pumped up spaghetti sauce that your kids won't know there's veges hiding in :)  I let it simmer for about 10 - 15 minutes, stirring occasionally.

For the meatballs: Pull 6 out of the freezer (or enough for you and your family - 3 meatballs per sandwich).  I defrosted at 1.5 minutes on 30% power. Then cooked them for 2 minutes on full power or until heated through.  

Now it's time to assemble the sandwich!  Slice the rolls almost all the way through and place in a "bed" of foil (this will help when you heat it and also helps the sandwich stay upright).  Put in a little marinara, add 3 meatballs, spoon a little more marinara over the meatballs, top with shredded mozzarella cheese and broil until the cheese is brown and bubbly.  I put mine in the toaster oven for even less work!
These were to-die-for.  Really.  And took no time to make!

Put remaining marinara in the refrigerator (or freeze) until you need to use it.  I used it to make Cinci's Chili on Sunday.  Yes!!

Breakfast Burritos: Freezer Friendly

Y'all.  Let me tell you what.  I made these babies last night and was so stoked when I calculated the costs... $1.50 each.  And in one cooking session, I made enough to have 14 breakfast burritos for DH and I to have in the mornings.  If you're like us, any extra way to stretch a buck is always appreciated.  Imagine my surprise this morning when I heated mine up and found that Little One also enjoyed this breakfast treat!!  I ended up making it with organic hash browns, organic uncured bacon (no nitrates), and organic eggs.  So I was stoked that they only cost $1.50.  And boy, were they yummy!  You should totally make these... soon!  Help keep your wallet and tummy full with these filling and delicious burritos :)

Spaghetti for a Crowd! Freezer Friendly :)

My last and final recipe to make one / take one and it sure was a crowd pleaser!!  I hope the sweet family enjoyed it as much as we did last night!  This Spaghetti for a Crowd recipe (the way I make it) would feed 6 adults easily.  I was amazed at how much it made.  You're taking one jar of spaghetti sauce and stretching it in unbelievable ways! Haha!  DH and I both had huge servings, have enough for both of us to have lunch... and we still have a hearty serving left over that I'm going to stick in the freezer for one of those nights that you need dinner ready real quick - you know like 5 minutes ago? ;)  A big huge plus is Little One enjoyed the sauce!  He's not big on the texture of pasta - weird, I know! - but gobbled up the sauce since it is hearty.  It's super easy to throw together!  I love meals like these.  I hope you enjoy it too!

Macaroni & Cheese with Tomatoes: Freezer Friendly

This week I've been making some recipes to take to another sweet family with a new addition!  There must be something in the water because babies are popping out around here like crazy.  Rest assured, I drink milk!  Haha :)  I stumbled on a great website with some freezer friendly meals and this recipe sure didn't disappoint.  It was creamy, a little sweet from the tomatoes, and crunchy from the breadcrumb topping.  It was very satisfying and would make a great main or side dish.  This recipe is also easily doubled - which I did - and it made FOUR 8 x 8 inch dishes of macaroni and cheese.  My kind of recipe for sure!  I baked one, froze one for me, and froze two to take!  You've gotta give this one a try ;)

Crockpot Stuffed Peppers

Please join in the collective "Ahhhh".  My DH got me a new camera for our anniversary!  Isn't she a beaut?  I'm slightly in love.  Alright.  More than slightly!  I took 800+ pictures with her the first weekend I had her.  Really.  I'm slightly ashamed by that vast number in 5 days.  Hey! At least it was a long weekend!?!  Anyway - this is the first time I have used her for taking food pictures... and I must say... I'm smitten!  It's amazing what a good camera can do with poor lighting.  And I'm amazed, too, because you can see the water droplets on the washed bell peppers!  Yes you can! Wowzers!  So regardless of how this recipe turns out, I'm posting it because I used the camera for the first time.  The recipe got rave reviews on Stephanie O'Dea's blog.  In 8 hours, we'll find out if the Greenes give it rave reviews too!

Turkey Meatballs

My DH doesn't like meatloaf and he didn't dig the turkey meatballs I made for Thanksgiving, so I was hesitant to try these.  They just looked so cute and delicious when I saw them sitting there on this blog post.  I figured I'd sell them as mini burgers.  And it turns out I didn't even have to.  His exact comment: "Meatloaf tastes like this?"  Maybe I might have a shoe in to try some meatloaves in the future!  This blog is so fun.  And her freezer-friendly post made me click right away.  She says "Meatballs are great. I actually defrosted some of these turkey meatballs two nights ago and it was such a perfect little meal when I really didn’t feel like cooking one more thing. I like to freeze individual tupperwares of four cooked meatballs with marinara sauce, and then it’s easy to defrost the perfect amount for one!"  Once I got the check of approval, I'm actually going to make a stock for my freezer for those nights I just don't want to cook.  Yippee!

Lasagna Cupcakes

Hello sweet ones.  Oh how I've missed you.
Life has been... well... life around here lately.  We've moved, so you'll notice different counters and lighting in the pictures. Moving with a little one is no joke and I'm quite sure I don't ever want to do it again.  Boo.  Tiredness all . the . time won out and as a result, we either ate sandwiches or I resorted to the same fall-back recipes that I've posted before or we ate out.  To say that I'm ready to get back into the swing of things is an understatement.  I've never realized how much of a routine / schedule person I am... until I'm off of it.  I think that's a result of Little One himself.  We try to stick as close to a routine as possible.  So, yes, we're ready to get back.  Tonight I had a minor meltdown because dinner was late.  Little One was having 'one of those days' and quite frankly I was too.  I didn't get to make this recipe as originally planned, so I tweaked it a little.  

And look how cute they still turned out!  Think individual lasagna cups!  I'm thankful for a fun and tasty recipe to kick start the cooking off again.  And a heartfelt thank you to my faithful followers who are still hanging on :)

Cinci's Chili

Are you still out there?  Sorry for the lack of posts lately.  Little One is sick with his first bad cold and it's been slow going around here.  Lots of coughing and sneezing - I'll spare you the details ;)  So needless to say, I haven't been trying a ton of new things lately.  We are all off of our schedules and Little One is trying to give up his afternoon nap to boot.  Hopefully he'll kick the worst of it soon!

Three nights ago, yes, it's taken me that long to find some time to post, I made an old trusty stand by - my mother-in-law's Cinci's Chili.  It's a busy season for us!

So what exactly is Cinci's chili you ask?  It's a type of chili from Cincinnati "characterized by unusual seasonings such as cinnamon, cloves, allspice, and chocolate."  Traditionally, in restaurants, you can order it several ways:
Bowl: chili in a bowl
Two-Way: chili and spaghetti
Three-Way: chili, spaghetti, and cheese
Four-Way: chili, spaghetti, cheese, and onions
Five-Way: chili, spaghetti, cheese, onions, and beans

Today, we'll be making it Five-Way!!  You can keep these ingredients on hand for a busy night and it takes a snap to whip it up!  And look how delicious it looks:

Crockpot Vegetarian Lasagna

Little One and I made our first solo airplane trip to see the grandparents this weekend.  So sorry for the hiatus - we were feverishly getting ready and making the DH's favorite foods to eat while we were gone.  {Score 1 point in the good wife column :) }  I finally have time to sit down and share some of those recipes with you.  The first one, is not necessarily a favorite of his, but it is a favorite of ours because it's quick and easy!  Great for a hurried week with lots to do!!

It was a Monday

Have you ever had one of those days?  I was so excited because on Saturday night last week I sat down and got all my meal planning done for this week.  Sunday I finalized my grocery list and Monday, Little One and I sat out for the grocery store.  I've found that Monday's are generally a good day to go around here - the shelves are restocked and there's typically not a ton of people.  Except for yesterday... when it all started... the grocery store was packed because I went around lunch.  Little One had gotten up from his 2 hour nap an hour early.  So with a fussy baby, I decided to head out since a car ride usually soothes him.  I found a good, up close parking space, took him inside to get a cart and begin the shopping.  I should have known when I almost got run over by a woman snapping up a cart before me.  HELLO woman, I have a child?!  I'm telling you, it was crazy in there.  They're redoing the store - I think this also compounded people's at-ti-tudes.

On my list, plain as day, it said "Pork tenderloin"  I was slated to cook these once and use them for 4 different meals this week.  I made it to the meat section, but since I'd never bought these at this particular grocery store I didn't know specifically where to look.  I found a package that read "Turkey tenderloins".  Thinking to myself "Wow, those are smaller than I remember them being."  I even turned it over to see that they were a little over a pound in weight.  IT NEVER DAWNED on me that I was looking at TURKEY instead of PORK.  Hello.  Wow.


I debated on whether to post about this misadventure, but I wanted to share my adventures in cooking with you.  Good or bad.

Unstuffed Pepper Soup


This recipe was delicious even with all the substitutions I tried.   So we'll start it off with the original recipe I got out of the cookbook.  I'm sure it would be good as that too.  It's really apparent now that I didn't even make the recipe that was in the cookbook!  But it was yummy and did indeed taste like a stuffed pepper.

Unstuffed Pepper Soup
Taste of Home: Casseroles, Slow Cooker & Soups, Copyright 2008
1 1/2 lbs ground beef (I used ground turkey)
3 large green peppers, chopped (I used red peppers)
1 large onion, chopped (I had about a half of a red onion and 1/4 white onion left)
2 cans (14 1/2 ounces each) beef broth (I used 2/3 box, about 22 oz of chicken stock)
2 cans (10 3/4 ounces each) condensed tomato soup, undiluted (I used one can of Healthy Request tomato soup then refilled the can with low sodium V8 juice and poured it in)
1 can (28 ounces) crushed tomatoes, undrained (I used 1 regular sized can of diced tomatoes - mine had oregano, basil and garlic - I had accidentally picked up)
1 can (4 ounces) mushroom stems and pieces, drained (I didn't use at all)
1 1/2 cups cooked rice

In a Dutch oven or large saucepan, cook the beef, green peppers, and onion over medium heat until meat is no longer pink; drain.  Stir in the broth, soup, tomatoes, and mushrooms.  Bring to a boil.  Reduce heat; cover and simmer for at least 30 minutes, stirring occasionally.  Add rice and heat through.  Yield: 10 servings
Well I started off in the largest pot I had.  I added the peppers and onions and a little extra virgin olive oil.  But when I added the turkey, the pot quickly got too small.  I know what they mean now when they say "don't crowd the pot." It was just pushing the turkey around the pot without actually cooking it and the turkey started sticking to the side.  I think soon I'm going to treat myself to a nice set of pots and pans.
So I put the cooking contents in the skillet and cooked the meat, peppers, and onion and then returned it to the pot.
Here are the substitutions I used.  It tasted delicious with these!  I had all this stuff on hand and decided it was close enough to the original recipe to get the same idea.  I was worried about the tomatoes, but they did fine.  Don't you hate when you pick up something off the grocery store shelf just to find when you get home it's something totally different?!  Grr.  That's what I had done with these tomatoes. Oh well!


It made a HUGE pot full.  Especially once I added the rice.  I absolutely LOVE this microwavable rice.  I use it all the time!  It's so easy and no mess.  We're going to have this for lunch tomorrow and then I'm thinking about freezing the rest.  I plan on turning leftovers into a chili by adding a can of beans (and maybe corn) to it when I reheat it.

To serve, I added some shredded swiss cheese and it hit the spot on a chilly night!


The verdict:
A great recipe!  Very versatile, as you can see by my many substitutions.  This would be easy to make vegetarian by adding some meat substitute crumbles instead of turkey or beef.  I'm sure it would be delicious with the green peppers.  The red peppers made it sweeter.   And I love the fact that it makes a HUGE amount!  This recipe would also be easily converted to a crockpot recipe.  After you cook the meat with the peppers and onions, transfer to a crockpot with the other liquids and turn on low 4 hours or high for 2.  (The time is my guestimate - so check for yourself after a few hours :))


UPDATE: I added 1 can dark red kidney beans, drained and rinsed, a splash of low sodium V8 juice, 1/4 envelope of chili seasoning, and the rest of the soup to a pot on the stove.  I cooked it until heated through and bubbly, for about 15 - 20 minutes.  Serve it with cheese and a dolup of sour cream for a hearty, easy round 2 chili.

Turkey Sloppy Joes, Round 2


Affirmative.

'Turkey Sloppy Joes' leftovers are fantastic over rice.  It made enough for 4 sandwiches the first day.  Round two was enough for a pretty substantial size meal for the DH and I.

And the best part: Dinner was ready in 6 minutes.
It was one of those eat-on-the-couch-catching-up-on-our-favorite-tv-show kinda night.

Turkey Sloppy Joes

On tonight's menu: Turkey Sloppy Joes 
Taste of Home: Casseroles, Slow Cooker & Soups, Copyright 2008

1 lb ground turkey breast
1 small onion, chopped
1/2 cup chopped celery
1/4 cup chopped green pepper
1 can (10 3/4 oz) Healthy Request Tomato Soup
1/2 cup ketchup
1 tablespoon brown sugar
2 tablespoons prepared mustard
1/4 teaspoon pepper
8 hamburger buns, split


In a large saucepan coated with nonstick cooking spray, cook the turkey, onion, celery and green pepper over medium heat until meat is no longer pink; drain if necessary.  Stir in the soup, ketchup, brown sugar, mustard, and pepper.
Transfer to a 3-qt. slow cooker.  Cover and cook on low for 4 hours.  Serve on buns.
Yield: 8 servings


I must admit I'm always on the lookout for something new to do with ground turkey.  We don't eat a lot of ground beef - honestly I've never even cooked it myself.  Our substitute is turkey.  The 99% fat free lean ground turkey breast.  It's more expensive, but worth it in the end.  I always am trying to stretch it out and do multiple things with it.

So, in my new cookbook from my grandparents for Christmas I came across this recipe.

Easy enough -- check --

Here it goes:

And it starts off with a bang.  Of course, I have a stash of red peppers and no green peppers to use in the fridge.  So, true to form, substitution starts early in this recipe.  I also didn't feel like measuring out 1/2 cup celery or 1/4 cup green (red) pepper, so I again, just threw some in :) {Or maybe it was a time issue: Insert suspiciously-quiet-baby-in-the-living-room-so-I-keep-going-back-and-forth-from-kitchen-to-living-room-to-check here} It ended up being 2 stalks celery and 1 small red pepper.  Instead of using non-stick cooking spray, I poured in a drizzle of extra virgin olive oil.

Then put in the turkey.

And cooked until turkey was no longer pink.  Now, in hindsight, I would have cut the veges up smaller and broken up the turkey into smaller pieces.  I think it might be a little hard to eat on a bun.

I poured in the ketchup, soup, mustard, and brown sugar.  And who really measures pepper?  I few grinds from the pepper mill were used here.

I put it in the crockpot.


And the final product:

All nice and bubbly and I guess the word 'sloppy' suits it :)

The verdict: 

It doesn't look like the picture in the cookbook.  I'm assuming they didn't use the 99% fat free turkey.  Most people don't.  And it tastes reminiscent of sweet and sour pork.  But, I think that may have to do with the fact that red peppers are sweeter than their green counterparts.  And I probably used more than it called for.   I'll definitely try this recipe again.  Next time, I'll cut up the veges smaller and break the meat into smaller chunks.  It would be delicious served over rice.  Tonight we'll try it on some hamburger buns!
