Sweet Potato Paradise Casserole

I have been wanting to try this for a while and finally decided this week was the time to jump in and give it a whirl.  You know, it is one of those recipes I found online but kept putting it off. Well put it off no more! This thing was amazing.

Let me preface - it takes some work up front but it is one of those dishes that you can prep while your kiddos eat lunch (and watch cartoons - am I the only one who does that?). Then you can just pop it in the oven at 5:00 and be ready for dinner.  So it does take some prepping but the outcome is delicious.

Healthy Mama BBQ Chicken: Crockpot & Freezer Friendly

Earlier this year I bought my very first ecookbook.  It takes up no space and is available wherever my computer or smart phone go --- which is, one or the other, always with me.  I think I may be in love.  It's this one from Mama and Baby Love and the cookbook is well worth your money.  It's chocked full of healthy freezer friendly meals!

This happens to be the first recipe I made of hers and it was delicious!  Can I tell you that I stretched two chicken breasts into four HUGE meals (1 dinner, 2 people + 1 lunch, 2 people) for my family.  You should try this one too!  And can I say... I'm stoked that the recipe made 2 big bags for my freezer... because one is waiting on me when I want to do nothing after this busy holiday season ahead!!

Breakfast Burritos: Freezer Friendly

Y'all.  Let me tell you what.  I made these babies last night and was so stoked when I calculated the costs... $1.50 each.  And in one cooking session, I made enough to have 14 breakfast burritos for DH and I to have in the mornings.  If you're like us, any extra way to stretch a buck is always appreciated.  Imagine my surprise this morning when I heated mine up and found that Little One also enjoyed this breakfast treat!!  I ended up making it with organic hash browns, organic uncured bacon (no nitrates), and organic eggs.  So I was stoked that they only cost $1.50.  And boy, were they yummy!  You should totally make these... soon!  Help keep your wallet and tummy full with these filling and delicious burritos :)

Sweet Potato Fries: Part II

So, here's the rest of the sweet potato fry story - this time I tried a few different things:
1) savory flavor: salt, pepper, and cumin
2) I tried cutting them into disks instead of long fry shapes
3) A hotter oven temperature for a shorter amount of time.

I kept thinking that these would make great appetizers - a dollop of sour cream and some dill.  Oh my. Yum!  This time, I added a dollop of ketchup and indulged in this healthy treat.

Sweet Potato Fries: Part I

I am loving this weather lately... well, minus all the rain we've been having!  But it does seem like after the rain it cools things off nicely and gives us a tease of what those cool autumn days are really going to be like.  I can't believe Saturday this week marks the halfway point through September.  I mean, really, where is this year going?!? I don't know about you, but I am longing to pull on my first pair of jeans of the season and a nice cozy sweater.  Mmmm... I can't wait.  At the first peek of cooler weather a few weeks ago, I purchased some organic sweet potatoes at the grocery store. I've been wanting to try something with them besides the same ole mashed sweet potatoes.  Thursday, I spent quite a bit of time googling "sweet potato fries" and my mouth drooled over all the options.

These babies were my first attempt and delicious!  Follow along below :)
