Chocolate Frozen Banana Pops

Or I like to affectionately call them "Hello Summer - I miss you - Please come back - Chocolate Frozen Banana Pops" ;)   I don't know about you but these frigid days lately have been a little too much.  And today it's 60 degrees?  Saturday, yep, it's gonna be 30.  Weird.

Alas.  Make these SUPER easy fun treats.  And pretend.  Just pretend.  You may have to crank up the heat in the house, but pretend you're on a tropical paradise!  DH and I were looking for some sweet, easy on the wallet and waistline, dessert options.  These fit the bill!  Yum.

Twice Baked Potato Casserole & Pan-Seared Flank Steak: Freezer Friendly

I told you in my last post that I've bitten the freezer bug.  It's true!  My little freezer over the refrigerator is stocked full - quick meals: some cooked and some to-be cooked, frozen veges, frozen fruit (we make a lot of smoothies for breakfast), and what I like to call "bits & pieces" - little leftovers that can be used elsewhere - for example: a 1/2 can of green chiles, a little diced onion, a bag of walnuts.  So far having meals on hand has proven to be effective if for no other reason than providing me peace of mind that I don't have to plan a meal on hectic nights, or in our case, when we return from a trip.  If I have time, I can thaw and cook a meal.  If I'm pressed for time, I can microwave-to-heat-up an already cooked entree.  I'm telling you - it is worth any extra time and money up front to make ahead.

This is one of the freezer meals I made a few weeks ago and we ate it last night along with a pan-seared flank steak.  It was delicious!!

Cheesy Vegetable Chowder: Pinterest Love ♥

I have been on a freezer cooking frenzy lately.  I've been inspired, thanks to Pinterest.  And I can't advocate enough - one afternoon (or two... with a little one ;)) of cooking has given me enough food to fill my refrigerator's freezer.  We now have meals on the ready - and this month is a crazy one for us!  Follow along - I'll be posting the recipes that are in my freezer.  I hope you can find them useful for the upcoming holiday seasons!

This recipe isn't a freezer meal, but one I found while browsing.  And it was perfect for our first rainy, didn't get out of the 60's kind of day!  I've also read that you can easily adapt this to a crockpot version.  I will be keeping a close eye on this one in the coming months!

Breakfast Burritos: Freezer Friendly

Y'all.  Let me tell you what.  I made these babies last night and was so stoked when I calculated the costs... $1.50 each.  And in one cooking session, I made enough to have 14 breakfast burritos for DH and I to have in the mornings.  If you're like us, any extra way to stretch a buck is always appreciated.  Imagine my surprise this morning when I heated mine up and found that Little One also enjoyed this breakfast treat!!  I ended up making it with organic hash browns, organic uncured bacon (no nitrates), and organic eggs.  So I was stoked that they only cost $1.50.  And boy, were they yummy!  You should totally make these... soon!  Help keep your wallet and tummy full with these filling and delicious burritos :)

Pan-Roasted Chicken with Lemon & Bacon

I was sent this recipe and decided to give it a whirl!  And of course I couldn't follow it as-is ;)  I changed it to include... drum roll please... BACON!!... after seeing this recipe.  Oh yum.  Instead of too lemony (like some of the reviews suggested) it had a slightly lemony, slightly smokey flavor combination.  I was in love!  But know that this was not love-at-first-sight.  It took some interesting oven baking, but it ended up being worth it in the end.  And because I was flustered at the end of 3 separate cooking times (for a one pot meal!) I didn't even take a picture of the end result. Boo. It ended up being tasty and I will try the flavor combination again definitely!
