Oven-baked Salmon

Found this recipe online at Food Network.

In the comments one person wrote that they baked the salmon with lemon and onion on top.  Sounded delicious, so off we went.

This is 18 oz of salmon filet cut into 6 pieces (3 oz portions).  In a 450 degree oven I cooked them for 15 minutes, only setting the ultra-sensitive fire alarm off once.  Go me.


Correction: Make that twice.



The Verdict:

The salmon was delicious.  Light, flaky, moist.  A definite recipe keeper.  I cooked it with thin slices of lemon and red onion on top.  I think it helped to keep them moist and added a little flavor.  Now, I have 4 leftover.  Two for lunches tomorrow and then with the Asparagus Risotto on Thursday.  Yum!
